- Cook the Bacon: In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. This should take about 5-7 minutes. Once cooked, remove the bacon with a slotted spoon and set it aside. Leave a little bacon grease in the pot for flavor.
- Sauté the Aromatics: Add the diced onion to the pot and cook for 2-3 minutes until softened. Add the minced garlic and cook for another 30 seconds, until fragrant.
- Add Liquids: Pour in the chicken broth, heavy cream, and milk. Stir everything together, scraping up any browned bits from the bottom of the pot. Bring the mixture to a simmer.
- Add Gnocchi: Once the broth is simmering, add the gnocchi. Cook for about 3-4 minutes, or until the gnocchi floats to the top.
- Cheese Time: Stir in the shredded cheddar cheese, letting it melt into the soup. You’ll notice the soup becoming creamy and rich. Season with salt and pepper to taste.
- Finish with Bacon: Add the crispy bacon back into the soup and stir. Let everything simmer for another 2 minutes to combine all the flavors.
- Serve: Ladle the soup into bowls, garnish with fresh parsley if desired, and enjoy!
Notes
This Bacon Cheddar Gnocchi Soup is a comforting and filling meal that can easily be adjusted to your taste. If you prefer a thicker soup, you can reduce the amount of broth or add a bit more cheddar. For a lighter version, you can substitute the heavy cream with half-and-half or use a lower-fat cheese. The bacon adds the perfect crispy contrast to the creamy soup, but feel free to omit it for a vegetarian version or substitute it with turkey bacon.
