Ingredients

  • 6 slices of bacon chopped
  • 1 small yellow onion diced
  • 2 cloves of garlic minced
  • 4 cups chicken broth low-sodium
  • 1 cup heavy cream
  • 1 cup whole milk
  • 16 oz gnocchi store-bought or homemade
  • 1 cup shredded cheddar cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish optional

Equipment

  • Large Pot or Dutch Oven
  • Wooden Spoon
  • Ladle
  • Knife and Cutting Board
  • Measuring Cups and Spoons
  • Colander

Method

  1. Cook the Bacon: In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. This should take about 5-7 minutes. Once cooked, remove the bacon with a slotted spoon and set it aside. Leave a little bacon grease in the pot for flavor.
  2. Sauté the Aromatics: Add the diced onion to the pot and cook for 2-3 minutes until softened. Add the minced garlic and cook for another 30 seconds, until fragrant.
  3. Add Liquids: Pour in the chicken broth, heavy cream, and milk. Stir everything together, scraping up any browned bits from the bottom of the pot. Bring the mixture to a simmer.
  4. Add Gnocchi: Once the broth is simmering, add the gnocchi. Cook for about 3-4 minutes, or until the gnocchi floats to the top.
  5. Cheese Time: Stir in the shredded cheddar cheese, letting it melt into the soup. You’ll notice the soup becoming creamy and rich. Season with salt and pepper to taste.
  6. Finish with Bacon: Add the crispy bacon back into the soup and stir. Let everything simmer for another 2 minutes to combine all the flavors.
  7. Serve: Ladle the soup into bowls, garnish with fresh parsley if desired, and enjoy!

Notes

This Bacon Cheddar Gnocchi Soup is a comforting and filling meal that can easily be adjusted to your taste. If you prefer a thicker soup, you can reduce the amount of broth or add a bit more cheddar. For a lighter version, you can substitute the heavy cream with half-and-half or use a lower-fat cheese. The bacon adds the perfect crispy contrast to the creamy soup, but feel free to omit it for a vegetarian version or substitute it with turkey bacon.
