- Prep the Chicken: Preheat your oven to 400°F (200°C). Prepare your chicken breasts by trimming the excess fat and, if needed, pounding them to an even thickness using a meat mallet.
- Set Up the Breading Station: In a shallow bowl, add the flour. In a second bowl, beat the eggs. In a third shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, oregano, basil, salt, and black pepper.
- Bread the Chicken: Dip each chicken breast into the flour, making sure it’s evenly coated. Then, dip it into the beaten eggs, followed by the breadcrumb mixture. Press down gently to ensure the breadcrumbs stick to the chicken.
- Prepare for Baking: Lightly grease a baking dish with olive oil. Place the breaded chicken breasts in the dish, ensuring they are evenly spaced.
- Bake the Chicken: Place the dish in the oven and bake the chicken for 20-25 minutes or until the chicken is cooked through and the breading is golden brown.
- Add the Sauce and Cheese: Once the chicken is done baking, remove the dish from the oven. Spoon the marinara sauce over each chicken breast, then sprinkle mozzarella and Parmesan cheese on top.
- Bake Again: Return the dish to the oven for an additional 5 minutes or until the cheese is melted and bubbly.
- Serve: Remove from the oven, garnish with fresh basil leaves (if desired), and serve immediately. Pair it with a side of pasta or a fresh salad for a complete meal.
Notes
To achieve the best results, make sure the chicken is thoroughly coated in breadcrumbs before baking. The crispiness of the breadcrumb crust is one of the highlights of this dish. Additionally, if you don’t have Italian breadcrumbs, you can substitute them with plain breadcrumbs, and just add a little extra Italian seasoning for flavor. Don’t rush the baking process—let the chicken bake fully before adding the sauce and cheese to avoid soggy breading.
