Method
 

  1. Heat the Olive Oil: In a large pot or Dutch oven, heat the olive oil over medium heat.
  2. Cook the Chicken: Add the chicken pieces to the pot and cook until browned. This should take about 5-7 minutes. Once cooked, remove the chicken and set it aside.
  3. Sauté the Vegetables: In the same pot, add the diced onion, carrots, and garlic. Sauté for about 5 minutes or until the onions become translucent.
