  • 2 large carrots peeled and diced
  • 2 celery stalks diced
  • 1 can 15 oz diced tomatoes
  • 1 can 15 oz tomato sauce
  • 4 cups beef broth
  • 1 ½ cups water
  • 2 teaspoons dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 1 cup green beans chopped
  • 1 cup corn kernels fresh or frozen
  • 1 medium potato peeled and diced
  • Optional: 1 cup frozen peas for extra veggies
  • Olive oil for browning the beef

Equipment

  • Large Pot or Dutch Oven
  • Wooden Spoon or Ladle
  • Sharp knife
  • Cutting board
  • Measuring Cups and Spoons
  • Can Opener
  • Colander

Method

  1. Brown the beef – In a large pot or Dutch oven, heat a tablespoon of olive oil over medium heat. Add the ground beef and cook until it’s browned, breaking it up into small pieces with a spoon. This should take about 5-7 minutes.
  2. Sauté the vegetables – Add the chopped onion, carrots, and celery to the pot with the beef. Cook for another 5 minutes, stirring occasionally, until the vegetables start to soften.
  3. Add liquids and seasonings – Stir in the diced tomatoes, tomato sauce, beef broth, and water. Then, add the dried basil, oregano, garlic powder, salt, and black pepper. Bring the mixture to a simmer.
  4. Simmer the soup – Add the chopped potatoes, green beans, and corn. Let the soup simmer for about 30 minutes or until the vegetables are tender and the flavors have melded together.
  5. Final touches – Taste and adjust seasoning if needed. For extra texture and nutrition, you can add frozen peas in the last 5 minutes of cooking.
  6. Serve – Ladle the soup into bowls and serve hot. Enjoy with a side of crusty bread for dipping!
