- Heat the base: Add apple cider, apple juice, white sugar, brown sugar, pumpkin purée, cinnamon sticks, nutmeg, and cinnamon to a large pot. Heat on medium. Stir often.
- Simmer gently: Let the mix warm for about 20 minutes. Do not boil. Boiling can change the flavor of spices.
- Remove from heat: After simmering, take the pot off the heat and let it cool for at least 30–45 minutes.
- Add vanilla and alcohol: When the mixture is warm—not hot—whisk in the vanilla and grain alcohol or vodka. Alcohol added to hot liquid can evaporate, so let it cool first.

- Bottle and chill: Use a funnel to fill glass jars. Seal tightly. Refrigerate for at least 24 hours so the flavors merge beautifully.
