- Place the turkey carcass into a large stockpot.
- Add cold water until bones are fully covered.
- Bring to a gentle boil over medium heat.
- Reduce heat and simmer uncovered for 90 minutes.
- Skim foam from the surface if needed.
- Add onions, carrots, celery, garlic, and herbs.
- Simmer another 45–60 minutes.
- Remove large bones using tongs.
- Strain soup if you want a clear broth.
- Return broth to pot and add turkey meat.
- Season with salt and pepper.
- Add noodles or rice if using, and cook until tender.
Notes
Turkey Carcass Soup depends on slow heat, not high heat. Never boil hard for long periods. A gentle simmer pulls flavor and collagen from the bones without making the broth cloudy or bitter.
