  • 12 oz smoked andouille sausage, sliced

  • 1 green bell pepper, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 2 teaspoons Cajun seasoning (adjust to taste)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon red pepper flakes (optional for extra heat)
  • 4 cups chicken broth
  • 1 (14 oz) can diced tomatoes
  • 2 tablespoons tomato paste
  • 1 cup heavy cream
  • 9 oz cheese tortellini (fresh or frozen)
  • Salt and black pepper, to taste
  • Fresh parsley or green onions, chopped (for garnish)

Method
 

  1. Sauté the sausage: Heat olive oil in a large pot over medium heat. Add sausage slices and cook until browned. Remove and set aside.
  2. Cook the veggies: In the same pot, add onions, peppers, and celery. Sauté for 4–5 minutes until soft. Add garlic and cook for another 30 seconds.
  3. Add seasoning: Stir in Cajun seasoning, paprika, and red pepper flakes. Mix until fragrant.
  4. Add broth and tomatoes: Pour in chicken broth, diced tomatoes, and tomato paste. Stir well and bring to a simmer.
  5. Simmer the soup: Add sausage back in. Let the soup cook for 10 minutes, allowing flavors to blend beautifully.
  6. Add tortellini: Drop in the tortellini and simmer for 7–8 minutes (or until cooked through).
  7. Add cream: Lower the heat and stir in heavy cream. Simmer gently for 3 minutes — don’t boil, or the cream may curdle.
  8. Taste and adjust: Add salt and pepper to taste. Garnish with parsley or green onions before serving.
