- Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken strips (or pieces) and cook for 5-7 minutes, turning occasionally until the chicken is golden brown on all sides and cooked through. Remove the chicken from the pan and set it aside.
- Make the Cowboy Butter Sauce: In the same skillet, melt 1/4 cup of butter over medium heat. Add the minced garlic and cook for 1 minute, stirring frequently to avoid burning. Stir in the lemon juice, Dijon mustard, Worcestershire sauce, paprika, thyme, parsley, and chives. Mix well.
- Finish the Sauce: Add the remaining 1/4 cup of butter to the skillet and stir until fully melted and combined. Season with salt and pepper to taste.
- Combine Chicken and Sauce: Return the cooked chicken to the skillet with the cowboy butter sauce. Toss the chicken in the sauce until it’s fully coated and heated through, about 3-4 minutes.
- Serve: Plate the chicken and pour any extra sauce over the top. Garnish with additional chopped herbs, if desired. Serve with your favorite side dishes, like mashed potatoes, rice, or roasted vegetables.

Always ensure the chicken reaches an internal temperature of 165°F (75°C) to ensure it is fully cooked. You can use a meat thermometer to check the temperature for accuracy. Feel free to experiment with the cowboy butter sauce. You can add chili flakes for a spicy kick or include fresh lemon zest for an extra burst of citrus flavor.
