Method
- Prepare the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning. If using metal skewers, you can skip this step.
- Make the Cowboy Butter: In a mixing bowl, whisk together melted butter, garlic, lemon juice, smoked paprika, cayenne pepper, mustard, parsley, and chives. Mix everything well until combined. Set aside.
- Marinate the Chicken: Drizzle the olive oil over the chicken pieces and season with salt and pepper. Toss well to ensure the chicken is evenly coated.
- Skewer the Chicken: Thread the chicken cubes onto the skewers. You can alternate with vegetables like bell peppers or onions if desired.
Grill or Bake the Skewers
- Grill: Preheat your grill to medium-high heat. Grill the skewers for about 5-7 minutes per side, basting occasionally with the cowboy butter sauce, until the chicken is cooked through (internal temperature should be 165°F or 75°C).
- Oven: Preheat the oven to 400°F (200°C). Place the skewers on a baking sheet lined with parchment paper. Bake for 15-20 minutes, basting with cowboy butter halfway through.
- Serve: Once the skewers are cooked through and golden brown, remove them from the grill or oven. Drizzle with extra cowboy butter and garnish with fresh herbs and lemon wedges.
Notes
When grilling or baking chicken, always ensure it reaches an internal temperature of 165°F (75°C) to guarantee it's fully cooked. Using a meat thermometer can help avoid any guesswork. For added flavor, feel free to marinate the chicken in the cowboy butter for 30 minutes before skewering it—this will infuse even more taste into the chicken. If you're short on time, don’t worry, just brush on the cowboy butter sauce during grilling or baking, and you'll still get incredible flavor.
