Ingredients

  • 1 lb ground beef or ground turkey for a leaner version
  • 1 medium onion diced
  • 3 bell peppers red, yellow, and green, diced
  • 3 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 1 can tomato sauce 15 oz
  • 4 cups beef broth or chicken broth for a lighter taste
  • 1 cup cooked rice white or brown
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil for sautéing
  • 1/2 cup shredded cheese optional, for topping

Equipment

  • Large Soup Pot or Dutch Oven
  • Sharp knife
  • Cutting board
  • Wooden Spoon or Spatula
  • Measuring Cups & Spoons
  • Ladle
  • Large spoon

Method

  1. Sauté the Vegetables: Heat the olive oil in a large pot over medium heat. Add the diced onion, bell peppers, and garlic. Cook for about 5-7 minutes, until the vegetables begin to soften.
  2. Brown the Ground Meat: Push the vegetables to the side and add the ground beef (or turkey) to the pot. Use a wooden spoon to break it apart, and cook until browned. Drain any excess fat if necessary.
  3. Add the Tomatoes and Spices: Stir in the diced tomatoes, tomato sauce, oregano, basil, paprika, salt, and pepper. Mix well to combine all the flavors.
  4. Pour in the Broth: Add the beef broth to the pot and bring everything to a simmer. Let it cook for 10-15 minutes to allow the flavors to blend.
  5. Add Rice: Stir in the cooked rice and cook for an additional 5 minutes. If you prefer a thicker soup, you can add a little more rice or let it simmer longer to reduce.
  6. Taste and Adjust: Give the soup a taste and adjust the seasonings if necessary. Add more salt, pepper, or herbs to suit your preference.
  7. Serve: Ladle the soup into bowls and top with shredded cheese if desired. Serve hot and enjoy!

Notes

I cooked this stuffed pepper soup as a quick and easy dinner option for my family, and it was an instant hit! The flavors blend beautifully, and the rice makes it hearty enough to be a filling meal on its own. You can also add extra veggies like zucchini or mushrooms for added nutrition and variety.
