- Preheat the Oven: Start by preheating your oven to 375°F (190°C). This ensures the oven is hot enough to cook the chicken properly.
- Prepare the Chicken Breasts: Place each chicken breast on a cutting board. Using a sharp knife, make a horizontal cut along the side of each chicken breast, creating a pocket for the filling. Be careful not to slice all the way through the chicken. Repeat for all the chicken breasts.
- Make the Cream Cheese Filling: In a bowl, mix the softened cream cheese, spinach (if using), minced garlic, shredded mozzarella cheese, thyme, pepper, and salt. Stir until everything is well combined. This mixture will be your stuffing.
- Stuff the Chicken Breasts: Carefully stuff each chicken breast with the cream cheese mixture, ensuring it’s well-filled. You may use toothpicks to seal the edges and prevent the filling from spilling out during cooking.
- Sear the Chicken: Heat olive oil in a skillet over medium-high heat. Once the oil is hot, add the chicken breasts and sear each side for about 2-3 minutes until golden brown. This step gives the chicken a crispy outer layer.
- Bake the Chicken: Transfer the seared chicken breasts to a baking dish. If desired, sprinkle some grated Parmesan cheese on top for an extra cheesy touch. Bake in the preheated oven for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
- Rest and Serve: Once baked, remove the chicken from the oven and let it rest for a few minutes before serving. This helps lock in the juices and keeps the chicken moist.

For added flavor, feel free to experiment with different herbs and spices in the filling. Fresh basil, chives, or oregano can bring a new twist to the recipe. If you're using toothpicks to seal the chicken, don’t forget to remove them before serving. This dish pairs well with a fresh salad, steamed vegetables, or mashed potatoes.
