Method
 

  1. Heat the pot: In a large soup pot, heat 2 tablespoons of olive oil over medium heat.

  3. Sauté the vegetables: In the same pot, add the diced onion, bell pepper, and celery. Sauté for about 5 minutes until the vegetables are soft.
