Ingredients

  • 2 cups of cooked chicken
  • 1 can (10.5 oz) of cream of chicken soup
  • 1 cup of sour cream
  • 1 cup of shredded cheddar cheese
  • 1 cup of frozen mixed vegetables
  • 1 cup of cooked pasta
  • 1/2 cup of chicken broth
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • Salt and pepper
  • 1 tablespoon of olive oil

Equipment

  • Casserole dish (9x13 inches is ideal)
  • Large mixing bowl
  • Cutting board
  • Sharp knife
  • Large spoon
  • Oven
  • Measuring Cups and Spoons
  • Aluminum Foil

Method

  1. Preheat the Oven: Set your oven to 350°F (175°C) and let it heat up while you get the casserole ready.
  2. Prepare the Casserole Dish: Grease the casserole dish with a tablespoon of olive oil to prevent sticking.
  3. Cook the Chicken: If you haven’t already, cook your chicken. You can sauté it in a pan, bake it in the oven, or even use leftover rotisserie chicken for an easy shortcut.
  4. Combine Ingredients: In a large bowl, mix together the cooked chicken, cream of chicken soup, sour cream, cheddar cheese, frozen vegetables, cooked pasta, chicken broth, garlic powder, and onion powder. Stir until everything is well combined.
  5. Assemble the Casserole: Pour the mixture into your prepared casserole dish, spreading it out evenly.
  6. Bake: Cover the casserole with aluminum foil and bake for 30 minutes. After 30 minutes, remove the foil and bake for another 10-15 minutes until the top is golden and bubbly.
  7. Serve and Enjoy: Let the casserole cool for a few minutes before serving. Garnish with fresh parsley or additional cheese if desired.

Notes

When preparing this dish, feel free to get creative! You can add a crunchy topping like breadcrumbs or crushed crackers to give the casserole an extra layer of texture. Make sure to cover the casserole during the first half of baking to keep it moist. You can also switch up the cheese types, like using mozzarella or gouda for a different flavor twist. The best part? Leftovers taste even better the next day, making it a great option for meal prep.
