Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons butter
  • 8 oz mushrooms Cremini or white button, sliced
  • 4 garlic cloves minced
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley optional for garnish

Method
 

Cook the Chicken
  1. Heat a large skillet over medium-high heat. Add 1 tablespoon of olive oil.
  2. Season both sides of the chicken breasts with salt, pepper, and garlic powder (optional).
  3. Add the chicken to the skillet and cook for 6-7 minutes on each side, or until golden brown and fully cooked. Remove the chicken from the skillet and set aside on a plate.
Sauté the Mushrooms
  1. In the same skillet, add 2 tablespoons of butter and let it melt.
  2. Add the sliced mushrooms and sauté for about 5 minutes, or until they’re soft and browned.
  3. Add the minced garlic and cook for another 1 minute, stirring constantly to avoid burning the garlic.
Make the Sauce
  1. Pour in the chicken broth and bring to a simmer. Let it cook for 2-3 minutes, reducing slightly.
  2. Add the heavy cream and grated Parmesan cheese, stirring to combine. Simmer for another 2-3 minutes until the sauce thickens.
Combine Chicken and Sauce
  1. Return the chicken breasts to the skillet and spoon the sauce over the top.
  2. Let it simmer for another 3-4 minutes, allowing the chicken to absorb the flavors.
  3. Garnish with fresh parsley (optional) before serving.
Serve
  1. Serve your Garlic Mushroom Chicken on a plate with a side of vegetables, rice, or mashed potatoes. The creamy sauce pairs beautifully with any of these sides.

Notes

For best results, use fresh, high-quality chicken breasts. If using frozen chicken, make sure it’s fully thawed before cooking. You can swap chicken breasts for thighs if you prefer dark meat. You can also use different mushrooms like shiitake or portobello for a unique twist.
