Ingredients

  • 1 lb (450g) Sausage (Italian sausage works great, but you can use any sausage you prefer)
  • 4-5 Medium Potatoes (peeled and cubed)
  • 1 Medium Onion (diced)
  • 2 Carrots (peeled and chopped)
  • 2 Celery Stalks (chopped)
  • 4-5 Cups Chicken Broth (or vegetable broth for a vegetarian version)
  • 2 Cups Heavy Cream (for a creamy, rich base)
  • 1-2 Cloves Garlic (minced)
  • 1 Teaspoon Dried Thyme
  • 1 Teaspoon Dried Basil
  • Salt and Pepper (to taste)
  • Olive Oil (for cooking the sausage)
  • Chopped Parsley or Green Onions (optional, for garnish)

Equipment

  • Large Pot
  • Wooden Spoon
  • Knife and Cutting Board
  • Measuring Cups and Spoons
  • Potato Peeler
  • Ladle

Method

  1. Brown the Sausage: In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the sausage and cook until browned, breaking it apart with a wooden spoon as it cooks. This will take about 5-7 minutes. Once cooked, remove the sausage from the pot and set it aside.
  2. Cook the Vegetables: In the same pot, add the onions, carrots, and celery. Cook for about 5 minutes, or until the vegetables are softened and fragrant. Stir occasionally to prevent them from sticking.
  3. Add Garlic and Spices: Add the minced garlic, thyme, and basil. Stir for about 1 minute, allowing the spices to release their flavors.
  4. Add Potatoes and Broth: Stir in the cubed potatoes and chicken broth. Bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 15-20 minutes, or until the potatoes are tender.
  5. Add the Cream: Once the potatoes are soft, add the heavy cream and stir. Bring it to a gentle simmer, and let it cook for another 5-7 minutes.
  6. Return the Sausage: Add the cooked sausage back into the pot. Stir everything together and let it heat through for about 3 minutes. Season with salt and pepper to taste.
  7. Serve: Ladle the soup into bowls, garnish with chopped parsley or green onions if desired, and serve hot. Enjoy your cozy meal!

Notes

I made this Sausage Potato Soup with a blend of Italian sausage and creamy potatoes, and it turned out absolutely delicious! You can adjust the ingredients to suit your taste, but the basic recipe provides a solid foundation for a comforting bowl of soup.
