Ground Chicken Soup

Creamy Italian Ground Chicken Soup Recipe

Ground Chicken Soup is a warm, comforting dish made withground chicken, vegetables, and a flavorful broth. It is a lighter take ontraditional chicken soups, using ground chicken for a softer texture thatabsorbs the broth's flavors. The addition of ingredients like garlic, onion, carrots, celery, and tomatoes makes it rich in flavor and nutrients.

Ingredients

  • 1 lb ground chicken lean
  • 1 medium onion diced
  • 2 medium carrots peeled and diced
  • 2 stalks celery diced
  • 4 cloves garlic minced
  • 4 cups chicken broth low-sodium preferred
  • 1 can 14.5 oz diced tomatoes (optional for added flavor)
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Fresh parsley for garnish

Equipment

  • Large Pot or Dutch Oven
  • Wooden Spoon or Spatula
  • Knife and Cutting Board
  • Measuring Cups and Spoons
  • Ladles
  • Strainer

Method

  1. Sauté the Aromatics: Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat. Add the diced onions, carrots, and celery. Stir occasionally and cook for about 5-7 minutes, until the vegetables have softened and the onions are translucent.
  2. Cook the Ground Chicken: Push the veggies to the side of the pot and add the ground chicken. Break it up with a wooden spoon and cook until it’s browned, about 5-7 minutes. Make sure the chicken is fully cooked and no longer pink.
  3. Add Garlic and Spices: Stir in the minced garlic, dried thyme, garlic powder, salt, and pepper. Let the garlic cook for another 1-2 minutes until fragrant.
  4. Simmer the Soup: Pour in the chicken broth and diced tomatoes (if using). Add the bay leaf. Bring the soup to a boil, then lower the heat and let it simmer for 20 minutes, allowing all the flavors to meld together.
  5. Taste and Adjust: After simmering, taste the soup. Add more salt, pepper, or any additional spices to your liking.
  6. Serve: Once the soup is ready, ladle it into bowls and garnish with fresh parsley. Serve hot with a slice of crusty bread on the side for the ultimate comfort meal!

Notes

This ground chicken soup is incredibly versatile. Feel free to play around with the ingredients. I cooked this soup with fresh thyme, garlic, and a hint of garlic powder to give it that homemade flavor. You can also substitute vegetables or seasonings based on your taste. For example, adding some green beans or corn can give the soup a delightful crunch. This soup is perfect for meal prep and tastes even better the next day after the flavors have had time to settle.
