- Cook the Sausage: Heat the olive oil over medium heat in a large stockpot or Dutch oven. Add the sausage, breaking it up with a wooden spoon, and cook until browned and cooked through. Remove the sausage from the pot and set it aside.
- Sauté the Vegetables: In the same pot, add the diced onions, carrots, and celery. Cook for about 5-7 minutes until softened, stirring occasionally. Add the minced garlic and cook for another minute.
- Add Broth and Seasonings: Pour in the chicken broth and heavy cream. Stir in the dried basil, thyme, salt, and pepper. Bring the mixture to a boil, then reduce the heat and let it simmer for 5 minutes.
- Add the Gnocchi: Stir in the gnocchi and cook for about 5 minutes, or until the gnocchi rises to the top, which indicates that it’s cooked through.
- Add the Sausage and Spinach: Return the cooked sausage to the pot. Add the chopped spinach and stir until the spinach wilts.
- Final Touches: Taste the soup and adjust the seasonings if necessary. Serve hot with a sprinkle of grated Parmesan cheese on top.
Notes
When making this soup, keep an eye on the gnocchi as it cooks. Gnocchi only takes a few minutes to cook and can become too soft if left in the broth for too long. It's best to add the gnocchi when the broth is boiling and remove it from the heat once it's tender and floating on top.
