Method
 

  1. Sauté the Vegetables: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables start to soften and become fragrant.
  2. Add Garlic and Seasonings: Stir in the minced garlic, dried thyme, and rosemary. Let them cook for another minute to release their flavors.
  3. Cook the Potatoes: Add the diced potatoes to the pot and stir well. Pour in the chicken broth and bring it to a boil. Once it’s boiling, reduce the heat and let the soup simmer for about 15 minutes, or until the potatoes are tender.
