- Cook the chicken: Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side or until golden brown and fully cooked through. Remove the chicken from the skillet and set it aside.
- Make the sauce: In the same skillet, add the minced garlic and cook for about 1 minute, until fragrant. Be careful not to burn it! Add the sun-dried tomatoes and cook for another 2 minutes.
- Add the broth and cream: Pour in the chicken broth and bring to a simmer. Once it starts to bubble, lower the heat and stir in the heavy cream. Let the sauce simmer for about 5 minutes, allowing it to thicken slightly.
- Finish the sauce: Add the Parmesan cheese and stir until it melts into the sauce, creating a rich, creamy texture. Taste the sauce and adjust the seasoning with more salt or pepper, if needed.
- Combine chicken and sauce: Return the cooked chicken to the skillet, spooning the sauce over the top. Let it cook for another 3-4 minutes, ensuring the chicken is fully coated and reheated.
- Serve and garnish: Plate the chicken and spoon the creamy garlic sauce over it. Garnish with fresh basil or thyme and serve hot.
Notes
The key to this dish is the balance of flavors – creamy, savory, and just a hint of sweetness from the sun-dried tomatoes. For an added touch, you can roast garlic for a more intense flavor, or even add a splash of white wine to the sauce for an extra layer of richness. Don’t skip the Parmesan, as it really brings the sauce together. The chicken should be tender and juicy, soaking up all the delicious flavors of the sauce.
