Method
 

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add the onion and garlic. Sauté for 3-4 minutes until they become fragrant and the onion softens.

  3. Stir in the shredded cabbage and let it cook for 3 minutes until it begins to wilt.
  4. Pour in the diced tomatoes (with juices) and vegetable broth. Add the dried thyme and bay leaves, and season with salt and pepper to taste.
  5. Bring the mixture to a boil, then reduce the heat to low. Let it simmer for 30-40 minutes, or until the vegetables are tender and the flavors have melded together.
  6. Once the soup is ready, remove the bay leaves and stir in the lemon juice (if using).
  7. Serve the soup hot, garnished with fresh parsley if desired.
