Ingredients

  • 1 lb Ground Beef
  • 1 medium Onion, chopped
  • 2 Carrots, peeled and diced
  • 2 Celery Sticks, chopped
  • 3 cloves Garlic, minced
  • 6 cups Beef Broth
  • 1 can (14.5 oz) Diced Tomatoes, drained
  • 2 cups Fresh or Frozen Tortellini
  • 2 tsp Italian Seasoning
  • 1 tsp Salt, or to taste
  • 1/2 tsp Black Pepper
  • 1 cup Spinach
  • 1 tbsp Olive Oil for sautéing

Equipment

  • Large Soup Pot or Dutch Oven
  • Wooden Spoon
  • Knife and Cutting Board
  • Measuring Cups and Spoons
  • Strainer

Method

  1. Cook the Beef: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks. Once browned, remove excess grease if necessary.
  2. Sauté Vegetables: Add the chopped onion, carrots, and celery to the pot with the beef. Sauté for about 5 minutes until the vegetables start to soften. Then, add the minced garlic and cook for another minute until fragrant.
  3. Add Broth and Tomatoes: Pour in the beef broth and diced tomatoes. Stir well, scraping the bottom of the pot to incorporate any tasty browned bits from the beef.
  4. Season the Soup: Add the Italian seasoning, salt, and pepper to the pot. Stir everything together, and bring the soup to a boil.
  5. Add Tortellini: Once the soup is boiling, add the tortellini. Reduce the heat to a simmer and cook for 7-10 minutes, or until the tortellini floats to the top and is tender.
  6. Add Spinach: If you’re using spinach, add it to the soup and stir it in until wilted. This adds a pop of color and extra nutrients to the soup.
  7. Serve and Enjoy: Taste and adjust seasoning if necessary. Serve hot, and enjoy your hearty, comforting Beef Tortellini Soup!
