Method
 

  1. Sauté the Onion and Garlic: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until it becomes translucent. Add the minced garlic and cook for another minute, until fragrant.
  2. Add the Potatoes and Broth: Next, add the diced potatoes to the pot. Stir them in with the onions and garlic for a minute to coat them in the oil and seasonings. Then, pour in the vegetable or chicken broth. Bring the mixture to a boil, then reduce the heat and simmer for 20 minutes, or until the potatoes are tender.
  3. Add the Cabbage: Once the potatoes are tender, add the shredded cabbage to the pot. Stir everything together and continue to simmer for another 10-15 minutes, allowing the cabbage to soften and meld with the flavors of the broth.
  4. Season the Soup: Season the soup with salt, pepper, and dried thyme (if using). Taste and adjust the seasoning as necessary. If you prefer a creamier soup, add the milk at this stage and stir to combine.
