Ingredients
  

  • 1 tablespoon olive oil for sautéing
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 1 cup celery chopped
  • 1 medium zucchini diced
  • 1 cup cauliflower florets
  • 1 cup spinach fresh
  • 2 medium carrots sliced
  • 4 cups low-sodium vegetable broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 bay leaf optional
  • 1 tablespoon heavy cream optional for creaminess

Method
 

  1. Sauté the vegetables: In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing for about 3-5 minutes until they’re soft and fragrant.
  2. Add the remaining veggies: Once the onion and garlic are ready, add the celery, zucchini, cauliflower, and carrots. Stir well and let them cook for another 5 minutes. This will bring out their natural flavors.
  3. Pour in the broth: Now, add the vegetable broth to the pot. Bring everything to a boil, then reduce the heat to a simmer. Let the soup cook for 15-20 minutes, or until the vegetables are tender.
  4. Add the spinach and seasonings: Once the veggies are soft, add the spinach, thyme, oregano, and salt and pepper to taste. Stir everything together, and cook for an additional 2-3 minutes, just until the spinach wilts.
  5. Optional creamy touch: If you like a creamy texture, add the heavy cream at this stage. Stir it in thoroughly and allow the soup to heat through.
