  • 2 cups cooked turkey shredded or diced
  • 1 turkey carcass or 6 cups turkey broth
  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 6 cups water if using carcass
  • 1 cup cooked noodles or rice optional
  • 2 tablespoons fresh parsley chopped

Method
 

  1. Heat olive oil in a large stockpot over medium heat.
  2. Add onion, carrots, and celery. Stir and cook for 5 minutes until soft.
  3. Add garlic. Stir for 30 seconds until fragrant.
  4. Place turkey carcass in the pot or pour in turkey broth.
  5. Add water if using a carcass. Bring to a gentle boil.
  6. Add salt, pepper, thyme, and bay leaf.
  7. Lower heat. Simmer uncovered for 45 minutes.
  8. Remove carcass. Pull off any remaining meat and return it to the pot.
  9. Add cooked turkey meat. Stir gently.
  10. Add noodles or rice if using. Cook 10 minutes more.
  11. Taste and adjust seasoning.
  12. Remove bay leaf. Finish with fresh parsley.

Notes

Great Turkey Soup depends on patience and balance. Always skim foam or fat from the top during simmering. This keeps the soup clean and light. Salt in stages, not all at once. Turkey broth reduces as it cooks, which can increase salt fast. If the soup tastes flat, add a small splash of lemon juice, not more salt. Store soup in shallow containers so it cools fast and stays safe.
