Easy Turkey Taco Soup Recipe

Ingredients
  

  • 1 lb ground turkey lean
  • 1 medium onion chopped
  • 1 bell pepper chopped
  • 2 cloves garlic minced
  • 1 can 15 oz diced tomatoes (with juice)
  • 1 can 15 oz kidney beans, drained and rinsed
  • 1 can 15 oz black beans, drained and rinsed
  • 4 cups low-sodium chicken broth
  • 1 packet taco seasoning or use homemade seasoning
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • ½ tsp paprika
  • Salt and pepper to taste
  • 1 tbsp olive oil

Method
 

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and bell pepper. Sauté for 3-4 minutes until they soften.
  2. Add the minced garlic and cook for another minute until fragrant.
  3. Add the ground turkey to the pot. Cook, breaking it up with a spoon, until browned and cooked through (about 5-7 minutes).
  4. Stir in the taco seasoning, cumin, chili powder, and paprika. Mix well to coat the meat and vegetables evenly with the spices.
  5. Add the diced tomatoes (with juice), kidney beans, black beans, and chicken broth. Stir everything together and bring to a simmer.
  6. Simmer for 20-25 minutes. Let the soup cook, allowing all the flavors to blend together.
  7. Taste and adjust seasonings. Add salt and pepper as needed.
  8. Serve with a dollop of sour cream, shredded cheese, tortilla chips, or fresh cilantro if desired.

Notes
