  • 2 cups cooked noodles or as needed

Method
 

  1. Prepare the vegetables: Start by heating the olive oil in a large pot over medium heat. Add the chopped onions and minced garlic. Sauté until fragrant and translucent (about 3-5 minutes).
  2. Cook the vegetables: Add the sliced carrots and diced zucchini to the pot. Stir them around for another 2-3 minutes until they start to soften.
  3. Add the broth and seasoning: Pour in the vegetable broth and bring it to a boil. Once boiling, lower the heat and let it simmer for 10 minutes, allowing the vegetables to cook through.
  4. Add the noodles and spinach: Add the cooked noodles and spinach (or kale) to the pot. Stir well, and cook for an additional 3-5 minutes to allow the noodles to soak in the broth’s flavor.
  5. Season the soup: Taste the soup and add soy sauce, salt, and pepper according to your preference. If you like a more tangy flavor, add a squeeze of lemon juice for an extra zing.
  6. Garnish and serve: Once the soup is ready, ladle it into bowls and garnish with fresh herbs like parsley or cilantro.

Notes

For an even richer flavor, let your soup simmer a little longer to allow the broth to absorb the essence of the vegetables. Don’t forget to adjust the seasoning as you go; a little bit of soy sauce or salt can elevate the dish. And if you prefer a heartier soup, try adding tofu or chickpeas for extra protein.
