Ingredients

  • 4 boneless skinless chicken breasts
  • 4 medium-sized potatoes preferably Yukon gold or russet
  • 4 tablespoons olive oil
  • 1 tablespoon melted butter
  • 6 cloves garlic minced
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish, optional

Equipment

  • Baking Sheet
  • Mixing Bowl
  • Cooking Spoon or Tongs
  • Oven
  • Knife
  • Garlic press
  • Measuring Spoons

Method

  1. Prep the potatoes: Wash and cut the potatoes into small cubes. Place them in a mixing bowl.
  2. Make the garlic Parmesan mixture: In the same bowl, add olive oil, melted butter, minced garlic, Parmesan cheese, oregano, thyme, salt, and pepper. Toss the potatoes in the mixture until they are evenly coated.
  3. Prepare the chicken: Season the chicken breasts with a bit of olive oil, salt, and pepper. If you want extra flavor, you can coat the chicken with some of the garlic Parmesan mixture as well.
  4. Assemble the dish: On a baking sheet, arrange the seasoned chicken breasts and garlic Parmesan-coated potatoes. Make sure there’s enough space between the chicken and potatoes for even cooking.
  5. Bake: Place the baking sheet in the preheated oven. Bake for 35-40 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the potatoes are golden and crispy.
  6. Garnish and serve: Once everything is cooked, remove the dish from the oven. Garnish with fresh parsley for a burst of color and added flavor.

Notes

When preparing this recipe, it’s essential to keep an eye on the potatoes, especially if they are cut into smaller pieces. Depending on the size of your potato cubes, they may cook faster or slower. If they are getting too crispy before the chicken is done, you can cover them loosely with aluminum foil to slow down the browning process. You can also use a meat thermometer to ensure that your chicken is cooked perfectly without overcooking.
