  • 1 lb 450g boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 large egg
  • 1 cup breadcrumbs preferably Panko for extra crispiness
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp melted butter
  • 2 tbsp fresh parsley chopped (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminium foil for easy cleanup.
  2. Prepare the chicken: Cut the chicken into bite-sized cubes. Place the chicken pieces in a large bowl.
  3. Coat the chicken: In a separate bowl, beat the egg. In another bowl, mix together the flour, breadcrumbs, grated Parmesan, garlic, Italian seasoning, salt, and pepper.
  4. Dredge the chicken: Dip each chicken piece into the flour mixture, then into the egg, and back into the flour mixture, ensuring the chicken is fully coated. Repeat this for each piece.
  5. Bake the chicken: Arrange the coated chicken pieces in a single layer on the prepared baking sheet. Drizzle the olive oil over the chicken to help it crisp up in the oven. Bake for 18-20 minutes, or until golden and cooked through. Make sure to flip the chicken halfway through for even browning.
  6. Prepare the garlic Parmesan sauce: While the chicken is baking, combine the melted butter, minced garlic, and a tablespoon of grated Parmesan in a small bowl. Once the chicken is done, immediately toss it in the garlic Parmesan sauce.
  7. Garnish and serve: Sprinkle the chicken bites with freshly chopped parsley and an extra sprinkle of Parmesan cheese. Serve hot and enjoy!
