Ingredients
  

  • 1 ½ lbs ground chicken lean
  • 1 large egg
  • ½ cup grated Parmesan cheese
  • 3 cloves garlic minced
  • 1 cup breadcrumbs preferably Italian-style for extra flavour
  • 1 small onion finely chopped
  • 2 tbsp fresh parsley chopped
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup milk
  • 1 tbsp olive oil for greasing the pan

Method
 

  1. Preheat Your Oven: Set the oven to 350°F (175°C) and let it heat up while you prepare the meatloaf.
  2. Prepare the Meat Mixture: In a large mixing bowl, combine the ground chicken, breadcrumbs, grated Parmesan cheese, minced garlic, onion, parsley, oregano, basil, salt, and pepper. Pour in the egg and milk, and use your hands or a spatula to mix everything together thoroughly.
  3. Shape the Meatloaf: Grease your loaf pan with olive oil to prevent sticking. Then, transfer the meat mixture into the pan and press it down gently to form a loaf shape. Ensure the meat is evenly distributed in the pan.
  4. Bake: Place the pan in the oven and bake for about 40-45 minutes or until the meatloaf is cooked through and reaches an internal temperature of 165°F (74°C).
  5. Serve: Once your meatloaf is done, let it rest for about 10 minutes before slicing. This allows the juices to settle and makes it easier to cut.

Notes

For added flavour, you can top your meatloaf with a little extra grated Parmesan cheese in the last 5 minutes of baking. This will melt and create a delicious cheesy crust on top!
