  • 1 lb 450g boneless, skinless chicken breasts
  • 3 tablespoons olive oil
  • 3 tablespoons unsalted butter melted
  • 4 cloves garlic minced
  • 1/2 cup grated parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes optional
  • Fresh parsley for garnish

Method
 

  1. Marinate the Chicken: In a medium mixing bowl, whisk together olive oil, melted butter, minced garlic, grated parmesan, oregano, parsley, salt, pepper, and red pepper flakes (if using). Add the chicken cubes to the marinade and toss to coat. Let the chicken marinate for at least 15 minutes, but you can marinate it longer for extra flavor.
  2. Prepare the Skewers: While the chicken is marinating, thread the chicken cubes onto your soaked skewers. Make sure to leave a little space between each piece to ensure even cooking.
  3. Preheat the Grill: Preheat your grill or grill pan to medium-high heat. If you’re using a grill pan, lightly oil it to prevent the chicken from sticking.
  4. Grill the Skewers: Place the skewers on the grill and cook for 10-12 minutes, turning occasionally until the chicken is golden brown and fully cooked. Make sure to baste the skewers with the leftover marinade every few minutes to keep the chicken moist and flavorful.
  5. Serve: Once the chicken is cooked, remove the skewers from the grill and let them rest for a couple of minutes. Sprinkle freshly chopped parsley on top for a burst of colour and freshness.

Notes

For the juiciest chicken skewers, make sure to marinate the chicken for at least 15 minutes, but if you have more time, marinate it for up to an hour. This allows the flavors to really soak into the chicken, making every bite burst with taste. Don't skip the basting during grilling; it helps to keep the chicken tender and gives it that extra garlic parmesan flavour.
