  • ½ cup freshly grated Parmesan cheese
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish optional

Method
 

  1. Prepare the Chicken: Start by flattening the chicken breasts to an even thickness using a meat mallet or rolling pin. This ensures they cook uniformly. Season the chicken with salt and pepper on both sides.
  2. Bread the Chicken: Set up your breading station with flour, beaten eggs, and breadcrumbs. Dredge each chicken breast in the flour, then dip in the egg, and coat thoroughly with the breadcrumbs. This creates that golden, crispy coating we all love.
  3. Grill the Chicken: Heat your grill pan or outdoor grill to medium-high heat and add a tablespoon of olive oil. Once hot, add the breaded chicken breasts and cook for 5-6 minutes per side or until they are cooked through and golden brown on the outside. Use tongs to flip them carefully.
