- Heat olive oil in a large pot over medium heat.
- Add ground beef. Break it apart with a spoon. Cook until browned.
- Remove excess fat if needed.
- Add onion, carrots, and celery. Stir and cook for 5 minutes.
- Add garlic. Cook for 30 seconds until fragrant.
- Stir in tomato paste, salt, pepper, paprika, and thyme.
- Add diced tomatoes and beef broth. Stir well.
- Add rinsed barley and bay leaf.
- Bring to a boil, then lower heat to a gentle simmer.
- Cover and cook for 35–40 minutes. Stir occasionally.
- Add peas during the last 5 minutes, if using.
- Remove bay leaf. Taste and adjust seasoning.
Notes
Hamburger Barley Soup thickens as it cooks because barley releases starch. If the soup becomes too thick, add more broth or water. Always taste at the end. Salt levels change as the soup reduces. For best flavor, let the soup rest for 10 minutes before serving. This allows the ingredients to settle and blend.
