Ingredients

  • 2 tablespoons olive oil or any oil of your choice
  • 1 medium onion chopped
  • 2 garlic cloves minced
  • 3 medium carrots sliced
  • 2 celery stalks chopped
  • 4 cups chicken broth preferably low sodium
  • 2 cups water
  • 1 lb chicken breast boneless, skinless, or bone-in for more flavor
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and pepper to taste
  • 1 tablespoon lemon juice optional, for added freshness
  • 1/2 cup cooked pasta optional for added texture, such as egg noodles or small pasta
  • Fresh parsley for garnish

Equipment

  • Large Stockpot
  • Cutting Board and Knife
  • Wooden Spoon
  • Measuring Spoons
  • Strainer
  • Ladle

Method

  1. Heat the Olive Oil: In a large stockpot, heat the olive oil over medium heat. Add the chopped onion and garlic. Sauté until fragrant and translucent, about 3-4 minutes.
  2. Add the Vegetables: Stir in the sliced carrots and celery. Cook for another 5 minutes, allowing the vegetables to soften and take on the flavors of the onion and garlic.
  3. Simmer the Broth: Pour in the chicken broth and water. Add the dried thyme and bay leaves. Stir everything together. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer for 20-25 minutes to develop the flavors.
  4. Cook the Chicken: If you're using boneless chicken breasts, add them directly into the pot and let them simmer until cooked through, about 15 minutes. For bone-in chicken, let it simmer for 30 minutes. Once cooked, remove the chicken from the pot and shred it using two forks.
  5. Add the Shredded Chicken: Return the shredded chicken to the pot. Add salt and pepper to taste. If you’re using pasta, stir it in now.
  6. Add Lemon Juice: Stir in the lemon juice for a touch of brightness, then let everything cook for another 5 minutes to meld the flavors.
  7. Serve and Enjoy: Ladle the soup into bowls, garnish with fresh parsley, and enjoy your nourishing bowl of Healing Chicken Soup!

Notes

For extra flavor, consider making your own chicken stock from scratch. This can be done by boiling chicken bones with vegetables, herbs, and water. It’s a great way to ensure your soup has rich, authentic flavor.
