- Heat the Olive Oil: In a large stockpot, heat the olive oil over medium heat. Add the chopped onion and garlic. Sauté until fragrant and translucent, about 3-4 minutes.
- Add the Vegetables: Stir in the sliced carrots and celery. Cook for another 5 minutes, allowing the vegetables to soften and take on the flavors of the onion and garlic.
- Simmer the Broth: Pour in the chicken broth and water. Add the dried thyme and bay leaves. Stir everything together. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and let it simmer for 20-25 minutes to develop the flavors.
- Cook the Chicken: If you're using boneless chicken breasts, add them directly into the pot and let them simmer until cooked through, about 15 minutes. For bone-in chicken, let it simmer for 30 minutes. Once cooked, remove the chicken from the pot and shred it using two forks.
- Add the Shredded Chicken: Return the shredded chicken to the pot. Add salt and pepper to taste. If you’re using pasta, stir it in now.
- Add Lemon Juice: Stir in the lemon juice for a touch of brightness, then let everything cook for another 5 minutes to meld the flavors.
