Ingredients
  

For the Soup:
  • 1 tablespoon sesame oil
  • 1- inch piece of ginger grated
  • 2 cloves garlic minced
  • 4 cups chicken broth or vegetable broth for a vegetarian version
  • 2 tablespoons soy sauce
  • 1 tablespoon miso paste optional but adds depth
  • 1 teaspoon rice vinegar
  • 1 cup sliced mushrooms shiitake or button mushrooms work well
  • 1/2 cup bok choy chopped
  • 2 green onions sliced
  • 1-2 cups cooked gyoza dumplings store-bought or homemade
For the Gyoza (if homemade):
  • 1/2 lb ground pork or chicken or tofu for vegetarian
  • 1/4 cup finely chopped cabbage
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon ginger grated
  • 1/4 teaspoon garlic powder
  • 1 package of gyoza wrappers or homemade

Method
 

  1. Cook the Gyoza Dumplings: If you’re making the gyoza from scratch, begin by preparing the filling. Combine ground meat (or tofu), cabbage, soy sauce, sesame oil, ginger, and garlic powder in a bowl. Place a small spoonful of the filling in the center of each gyoza wrapper, then fold and seal the edges by pleating. You can either steam or pan-fry the dumplings until golden brown. Set them aside.
  2. Prepare the Soup Base: In a large pot or Dutch oven, heat sesame oil over medium heat. Add the grated ginger and minced garlic, sautéing for about 1 minute until fragrant.
  3. Add Broth and Seasonings: Pour in the chicken or vegetable broth, soy sauce, miso paste (if using), and rice vinegar. Stir to combine, and bring the broth to a gentle simmer. This base will be your flavorful foundation.
  4. Add Vegetables: Add the mushrooms and bok choy to the pot. Let them simmer in the broth for about 5-7 minutes until softened.
  5. Add the Gyoza: Gently place the cooked gyoza dumplings into the simmering soup. Let them cook in the broth for an additional 5 minutes to ensure they’re heated through.
  6. Garnish and Serve: Once the gyoza are hot and the vegetables are tender, ladle the soup into bowls. Top with freshly sliced green onions for added crunch and flavor. You can also drizzle a little sesame oil or soy sauce on top for extra depth of flavor.

Notes

While cooking the gyoza, be sure not to overcrowd them in the pan or pot. This will allow them to cook evenly and ensure the filling stays intact. For a deeper flavor, don’t hesitate to adjust the seasonings based on your preferences, whether you like it spicier with a dash of chili flakes or richer with more soy sauce.
