Ingredients
  

For themeatballs:
  • 1/2 pound ground beef
  • 1/4 pound ground pork
  • 1/3 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic minced
  • 2 tablespoons chopped parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For the soup:
  • 2 tablespoons olive oil
  • 1 small onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 3 cloves garlic minced
  • 6 cups chicken broth
  • 1 can 14.5 oz diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes optional
  • 1 cup small pasta ditalini or orzo
  • 2 cups fresh spinach
  • Salt and pepper to taste

Method
 

  1. Make the meatballs: Mix all meatball ingredients gently in a bowl. Roll into small balls, about one inch wide.
  2. Cook the vegetables: Heat olive oil in a large pot. Add onion, carrots, and celery. Cook for 5 minutes until soft. Add garlic and stir for 30 seconds.
  3. Build the broth: Pour in chicken broth and diced tomatoes. Add Italian seasoning and red pepper flakes. Bring to a gentle boil.
  4. Cook the meatballs: Carefully add meatballs to the pot. Lower heat and simmer for 15 minutes.
  5. Add pasta and greens: Stir in pasta and cook until tender. Add spinach last and cook until wilted.
  6. Season and serve: Taste the Italian Meatball Soup. Add salt and pepper if needed. Serve hot.
