  • 4 boneless skinless chicken breasts
  • 1 cup grated Parmesan cheese
  • ½ cup almond flour for the low-carb touch
  • 2 large eggs
  • 2 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp melted butter for added flavour

Method
 

  1. Preheat the oven to 400°F (200°C) and line your baking sheet with parchment paper.
  2. Prepare the chicken breasts: If they are particularly thick, slice them horizontally to create thinner pieces that cook evenly.
  3. Whisk the eggs: In a shallow bowl, crack the eggs and whisk them together with a pinch of salt and pepper. This will help the coating stick to the chicken.
  4. Mix the dry ingredients: In another shallow bowl, combine the grated Parmesan, almond flour, garlic powder, onion powder, oregano, basil, salt, and pepper.
  5. Coat the chicken: Dip each chicken breast into the egg mixture, ensuring it's fully coated. Then, dip it into the Parmesan mixture, pressing gently to ensure the crust sticks well.
  6. Bake the chicken: Place the coated chicken breasts on the prepared baking sheet and drizzle with melted butter. Bake for about 25 minutes or until the chicken reaches an internal temperature of 165°F (75°C) and the crust is golden and crispy.
  7. Serve: Let the chicken rest for a few minutes before slicing or serving with your favourite low-carb side dish.

Notes

For an even crispier crust, you can broil the chicken for 2-3 minutes at the end of cooking. Just keep a close eye on it to avoid burning! Also, if you prefer a more pronounced garlic flavour, feel free to add an extra clove of minced garlic to the coating mixture.
