- Heat olive oil in a large stockpot over medium heat.
- Add onion, carrots, and celery. Stir and cook for 5 minutes until soft.
- Add garlic and cook for 30 seconds. Stir often.
- Pour in the broth and bring to a gentle boil.
- Add turkey, thyme, bay leaf, salt, and pepper. Stir well.
- Lower heat and simmer for 15 minutes.
- Add egg noodles and cook for 8–10 minutes until tender.
- Remove bay leaf. Taste and adjust seasoning.
- Sprinkle fresh parsley on top and serve hot.
Notes
Turkey Noodle Soup tastes best when flavors build slowly. Cooking vegetables first releases natural sweetness. Adding noodles near the end keeps them firm. If you plan leftovers, cook noodles separately and add them when serving. This step prevents soggy noodles the next day.
