  • ½ cup uncooked wild rice or 1½ cups cooked
  • 6 cups chicken or turkey broth
  • 2 cups cooked turkey diced
  • 1 cup milk or half-and-half
  • 2 tablespoons all-purpose flour
  • 1 bay leaf
  • Optional: fresh parsley for garnish

Method
 

  1. Heat olive oil or butter in a large pot over medium heat.
  2. Add onion, carrot, and celery. Stir and cook for 5 minutes until soft.
  3. Add garlic, thyme, rosemary, salt, and pepper. Stir for 30 seconds.
  4. Add wild rice and broth. Drop in the bay leaf. Bring to a boil.
  5. Lower heat and simmer for 30 minutes until rice is tender.
  6. Add cooked turkey and simmer for 5 more minutes.
  7. In a small bowl, whisk flour with milk until smooth.
  8. Slowly pour the mixture into the soup while stirring.
  9. Cook for 5–7 minutes until the soup thickens.
  10. Remove bay leaf. Taste and adjust seasoning.
  11. Serve hot with fresh parsley on top.

Notes

For the best Turkey Wild Rice Soup, control your heat. Always keep it at a gentle simmer after adding dairy. High heat can cause curdling. If your soup gets too thick, add warm broth slowly. Wild rice absorbs liquid over time, especially during storage. Also, cut turkey evenly so every spoon has balanced flavor and texture.
