- Prepare the Chicken: Pat your chicken breasts dry with a paper towel. Season them generously with salt, pepper, and dried oregano on both sides.
- Heat the Skillet: Place a large skillet over medium heat. Add the olive oil and butter, allowing the butter to melt completely and start to sizzle.
- Cook the Chicken: Add the chicken breasts to the skillet. Cook for about 6-7 minutes on each side, or until the chicken is golden brown and cooked through (internal temperature should reach 165°F). Remove the chicken from the skillet and set aside.
- Make the Garlic Lemon Sauce: In the same skillet, add the minced garlic. Cook for about 30 seconds until fragrant (but not burnt). Add the lemon zest, lemon juice, and parmesan cheese to the skillet. Stir to combine, scraping up any browned bits from the bottom of the pan.
- Combine: Return the chicken to the skillet and spoon the garlic-lemon sauce over the chicken. Let it cook for another 2-3 minutes, allowing the flavors to meld together.
- Garnish and Serve: Sprinkle fresh parsley on top of the chicken and serve with extra lemon wedges on the side for added brightness.
Notes
For extra flavor, you can marinate the chicken in the lemon, garlic, and olive oil mixture for about 30 minutes before cooking. This will infuse the chicken with even more flavor and make it juicier. You can also serve the chicken with a side of roasted vegetables, pasta, or mashed potatoes for a complete meal.
