Method
 

  1. Sear the Chicken – Heat the olive oil in your large stockpot over medium heat. Once hot, add the chicken pieces and season them with a little salt and pepper. Cook until the chicken is browned on all sides (about 5-7 minutes). Remove the chicken and set aside.
  2. Cook the Vegetables – In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes, or until the veggies start to soften and the kitchen smells amazing.
  3. Add the Broth and Cream – Stir in the tomato paste, then pour in the chicken broth and heavy cream. Add the Italian seasoning and red pepper flakes (if using). Bring the mixture to a simmer.
  4. Combine Chicken and Soup – Add the browned chicken back into the pot, stirring to combine. Let the soup simmer for about 25 minutes, allowing the flavors to meld together. The chicken should be fully cooked by now.
  5. Finish and Serve – Taste the soup and adjust the seasonings with more salt and pepper if needed. Once the flavors are just right, ladle the soup into bowls and garnish with freshly chopped parsley.
