  • 2 celery stalks diced
  • 10 oz mushrooms button or cremini, sliced
  • 3 cloves garlic minced
  • 6 cups vegetable broth or chicken broth
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 2 tablespoons fresh parsley chopped
  • Optional: 1 teaspoon soy sauce or tamari for deeper flavor

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrot, and celery. Stir and cook for 5 minutes until soft.
  3. Add mushrooms. Cook for 6–8 minutes until they release moisture and brown.
  4. Add garlic, thyme, salt, and pepper. Stir for 30 seconds.
  5. Add barley and mix well with vegetables.
  6. Pour in broth and add bay leaf. Bring to a gentle boil.
  7. Lower heat, cover, and simmer for 40–45 minutes until barley is tender.
  8. Remove bay leaf. Taste and adjust seasoning.
  9. Stir in parsley before serving.
