  • 1 teaspoon dried parsley optional

Method
 

  1. Prepare the chicken: If your chicken breasts are too thick, slice them horizontally into thinner pieces for even cooking. Season both sides of the chicken with a pinch of salt and pepper.
  2. Make the sour cream mixture: In a medium mixing bowl, combine the sour cream, onion soup mix (or homemade onion seasoning blend), garlic powder, and parsley. Mix well until smooth and creamy.
  3. Prepare the coating: In a large shallow dish, combine the breadcrumbs and Parmesan cheese. Mix them together evenly.
  4. Coat the chicken: Dip each piece of chicken into the sour cream mixture, making sure it's fully coated. Then, roll it in the breadcrumb and Parmesan mixture until it’s fully covered.
  5. Arrange on the baking sheet: Place the coated chicken pieces on the prepared baking sheet. Drizzle a little olive oil over the top of each chicken piece to help them crisp up in the oven.
  6. Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the coating is golden brown and crispy.
