  • 1/2 teaspoon paprika
For the soup:
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 6 cups low-sodium chicken broth
  • 1 cup crushed tomatoes
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup baby spinach
  • Optional: cooked pasta or rice 1 cup

Method
 

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Stir and cook for 5 minutes until soft.
  3. Add garlic. Stir for 30 seconds until fragrant.
  4. Pour in chicken broth and crushed tomatoes.
  5. Add oregano, thyme, bay leaf, salt, and pepper.
  6. Bring the soup to a gentle boil.
  7. Lower heat to a steady simmer.
  8. Carefully add turkey meatballs one by one.
  9. Cover and simmer for 15 minutes.
  10. Stir gently so meatballs stay whole.
  11. Add spinach and optional pasta or rice.
  12. Cook for 5 more minutes.
  13. Remove bay leaf.
  14. Taste and adjust seasoning.

Notes

Always keep the soup at a gentle simmer. A hard boil can break the meatballs. Use low-sodium broth so you control salt levels. If meatballs float, that means they are cooked through.
