Method
 

  1. Cook the Leeks: In your large soup pot or Dutch oven, melt the butter over medium heat. Add the sliced leeks and sauté them for about 5-7 minutes until they’re soft and fragrant. Stir occasionally to prevent them from burning.
  2. Add Garlic: Once the leeks are softened, add the minced garlic and sauté for another minute until fragrant.
  3. Add the Potatoes and Broth: Add the diced potatoes to the pot, followed by the broth. Stir to combine, then bring everything to a boil.
  4. Simmer: Once the soup is boiling, reduce the heat and let it simmer for about 20-25 minutes, or until the potatoes are tender when pierced with a fork.
  5. Blend the Soup: Using an immersion blender, carefully blend the soup until smooth. If you don’t have an immersion blender, you can carefully transfer the soup in batches to a regular blender. Blend until smooth and return to the pot.
  6. Add Cream (Optional): If you prefer a creamier soup, stir in the heavy cream and let it heat through for about 3 minutes.
  7. Season to Taste: Taste the soup and adjust the seasoning. Add salt, pepper, and thyme to your liking.
  8. Serve and Garnish: Ladle the soup into bowls and garnish with freshly chopped chives or parsley for a burst of color and extra flavor.
