  • 1 lb (450g) Italian sausage
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) low-sodium chicken broth
  • 4 cups (1 liter) chicken stock
  • 1 package (9 oz) fresh tortellini
  • 2 cups (packed) fresh spinach
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • Grated Parmesan cheese

Method
 

  1. Heat the olive oil in a large soup pot over medium heat. Once hot, add the sausage. Use a wooden spoon to break the sausage into small crumbles as it cooks. Stir occasionally until the sausage is browned and fully cooked, about 5-7 minutes.
  2. Add the onions and garlic to the pot and sauté for another 2-3 minutes until the onions become translucent and fragrant.
  3. Stir in the tomatoes, chicken broth, and chicken stock. Scrape up any browned bits from the bottom of the pot. This will add extra flavor to your soup.
  4. Add the dried basil, oregano, red pepper flakes, and a pinch of salt and pepper. Let the soup simmer for about 5 minutes to let the flavors meld.
  5. Add the tortellini to the soup and cook according to the package instructions (usually 3-4 minutes for fresh tortellini). Stir occasionally to ensure they don't stick together.
  6. Add the spinach and cook for another 1-2 minutes until it wilts down into the soup.
  7. Taste the soup and adjust the seasonings as needed. You can add more salt, pepper, or herbs based on your preference.
