  • 1 medium onion diced
  • 1 bell pepper diced
  • 2 cloves garlic minced
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz pinto beans, drained and rinsed
  • 1 can 15 oz diced tomatoes
  • 1 can 15 oz corn kernels, drained
  • 4 cups vegetable broth
  • 1 packet taco seasoning or 2 tablespoons homemade taco seasoning
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • ½ teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Heat the Olive Oil: In a large soup pot, heat the olive oil over medium heat.
  2. Sauté the Vegetables: Add the diced onion, bell pepper, and garlic to the pot. Sauté for about 5 minutes, until the vegetables soften and the onions become translucent.
  3. Add the Beans and Vegetables: Stir in the black beans, pinto beans, diced tomatoes, and corn. Let everything mix together.
  4. Pour in the Broth: Add the vegetable broth to the pot, then stir in the taco seasoning, cumin, chili powder, garlic powder, salt, and pepper. Bring the soup to a simmer.
  5. Simmer and Stir: Reduce the heat to low and let the soup simmer for 20-25 minutes, stirring occasionally. This allows the flavors to meld together.
  6. Adjust Seasoning: Taste the soup and add more salt, pepper, or seasoning if necessary. If you like a tangy kick, add a tablespoon of lime juice at this stage.
  7. Serve: Ladle the soup into bowls and garnish with fresh cilantro. Top with tortilla chips or shredded cheese if desired.

Notes

Don’t skip the simmering time! The longer the soup simmers, the better the flavors will develop. If you’re in a rush, you can reduce the simmering time, but it’s worth the wait for that rich, taco-inspired flavor.
